Annoimo sweet potatoes are so full of sweetness that they are also called mitsuimo or honey potatoes. This special variety is combined with white bean paste and agar-agar to create a delicious smoothly textured sweet called Mitsuimo Goyomi. In preparation for this treat, the harvested potatoes are further ripened in a storehouse before being slow-roasted over charcoals to draw out their rich golden sticky flavor.
