Yuzu is a fragrant citrus fruit that is often used in Japan as a flavoring for both sweet and savory foods. In this confection, the juice of the fruit and pieces of candied peel are mixed together with white bean paste and agar-agar. One bite will fill your mouth with the fabulous flavor, aroma, and tang of yuzu. It is available only from mid-November for two months, when the yuzu fruit has ripened to a golden color and is at its aromatic peak.
